Apprentices get to sling the skillets

Tomorrow night the Rocky Mountain Chefs of Colorado (RMCC) will hold their fourth annual endowment dinner at the Broadmoor Hotel in Colorado Springs. For $75 a person, you get  an eight-course meal executed by third-year students in the RMCC apprenticeship program. They'll be assisted by the sponsoring chefs and instructors of the programs. 

"The theme involves the classical foundations of modern cuisine with product support from the industry and the personal experiences of culinary students," says chef instructor Joachim Schaaf. And from a glance at the menu, there seems to be a fantastic fusion of time and techniques that are edgy, yet fundamentally grounded. 

The Broadmoor has hosted the dinner for two years, with the Brown Palace hosting the other two -- not shabby spots for the culmination of three years of hard work. The apprenticeship program combines on-the-job experience with classroom time to help create the next generation of chefs; get a taste of the future tomorrow night at the Broadmoor.
