Buffalo to go
Eating buffalo is not only good for you, but it's good for the future of the animal, as Jonathan Shikes notes in this Save the Buffalo post. And thanks to Colorado Buffalo Grill, you can get it on the go. From 6 a.m.- 3 p.m. Monday through Saturday (weather permitting), the mobile restaurant is stationed at the southeast corner of Ponderosa and Parker in Parker, selling buffalo breakfast burritos (breakfast ends at 10:30), as well as buffalo burgers, buffalo sausage, buffalo Reubens, buffalo jerky and even cuts of buffalo meat that you can cook for dinner.
Right now, though, Colorado Buffalo Grill is doing a big business in the stockyards area of the National Western Stock Show. We grabbed a buffalo BBQ sandwich yesterday, and with a couple of jalapeno slices added from the condiment corral just behind the trailer, it was the best food we've ever found at the Stock Show. (Then again, we have yet to try the jalapeno cheese on a stick, which is being sold near the entrance to the arena but requires a five-minute wait, and we were in dire need of a beer at the time.)
