Zolo mixing a meal with mezcal

For those of you who love mezcal, the agave-based liquor that isn't tequila, head straight for Zolo Southwestern Grill on Thursday, March 12. The Big Red F restaurant at 2525 Arapahoe Avenue in Boulder will be doing a five-course dinner based on Del Maguey Mezcal, which is produced small-batch and has won various World Spirits championships.

"The inspiration for having the Del Maguey Mezcal dinner came from my passion for Del Maguey's product," explains Zolo bar manager Brian Selbitschka. "The artisan nature of production, the family-owned distilleries and the fact that each mezcal is named after the village it comes from and reflects its terroir. The craft behind the product is really showcased."

Th result is a thought-provoking pairing."This dinner is a chance for us to educate our customers on the not-as-popular mezcal product, which to me is the quintessential spirit of agave," says Selbitschka. "These mezcals have a lot going on and as you build your palate and knowledge about tequila, this depth becomes clear."

The dinner, cooked by chef Brett Smith, starts at 6:30 p.m. and is $65 a person. For reservations, call 303-449-0444.
