Boulder adds a Circle to its restaurant scene
"Everyone is asking about the menu, but my main concern is that we have good quality food," said Steve Abo when I spoke to him back in October about Circle, the new restaurant he opened this week at 1035 Pearl Street in Boulder. If Abo's name sounds familiar, that's because he's the eponym behind a bunch of metro area pizzerias.
But Circle isn't a pizzeria. According to the website, the restaurant will "feature a well-rounded menu of regional American and popular international dishes." What that really means is anyone's guess, and when I called Circle to ask for more information about the menu, I got squared: "The managers are too busy to help; maybe later, I'm sorry," said the genuinely apologetic woman who answered the phone.
We do know that Eric Guthrie, ex of Q's Restaurant in the Hotel Boulderado, is the executive chef. "My experience in this town at both the Culinary School of the Rockies and at Q's has shown me that the Boulder diner likes simple food with lots of flavor. My menu reflects this preference and each dish is made with proper technique and quality ingredients," explains Guthrie.
