Jim 'N Nick's Bar-B-Q proclaims Tuesday taco day

Not that anyone needs an another excuse to eat tacos, but Jim 'N Nick's Bar-B-Q has declared Tuesday the day of the taco. And while barbecue and tacos may not sound harmonious on the surface, the principle behind "low and slow" cooking crosses any border. "When it comes to honoring the patient craft of barbecuing, we have our way of doing things with low heat and slow hickory smoke," explains owner Paul Bestafka. "We would never change that, but we do like to get creative from time to time in the way we present those time-honored traditions." To that end, he says, "Taco Tuesdays are a combination of something creative and new, with something timeless and classic."

These hybrid tacos come with a variety of meats stuffed inside, ranging from slow-cooked pork shoulder and hickory-smoked chicken to classic beef brisket and that Southern favorite, fried catfish. To complete the Mexican theme, each taco can be topped with pico de gallo, Jack cheese or an extra spicy barbecue sauce.
