Number 42: Lemon cheesecake from L'Atelier

On a recent tasting menu at L'Atelier, Radek Cerny's remarkably good restaurant in Boulder, the kitchen paraded tuna tartare with a cucumber shooter; lobster ravioli pooled in infused oils; deep sea scallops with a pea shoot salad; sweet breads accompanied by oyster mushrooms; Maine lobster with smoke and foam, duck breast sharing space with parsnips and honey, buffalo with black currants; and a cheese plate. There are few chefs as wildly gifted as Cerny, whose menu achieves the kind of refinement, intensity and magical flavor heights reserved for artists, which is exactly what Cerny is, especially when it comes to his sugar finales. He mischievously transforms cheesecake, a dessert that should have been retired years ago, into a lemony citrus cloud that's so murderously delicious and impossibly custard-y that you'll go grabby for yours and everyone else's, even after you've already succumbed to eight courses.
