Crepes on-the-Go opens at the Streets of SouthGlenn
Beth Lea found her inspiration for Crepes on the Go in Europe -- and brought it back to the Streets of Southglenn. 
Lea attended Cook Street School of Culinary Arts, and "part of the professional 180 program is to attend cooking school in Paris and in Asti, Italy," she explains. "I fell in love with the European lifestyle and wanted to bring that here."
Initially, she thought of putting a crepe cart on the 16th Street Mall. "But this 150-square-foot kiosk at the Streets of SouthGlenn became available," she remembers, "and it was perfect. I live across the street!"
She got her place open just before the new year. "People love the idea," she says. "I served just under 700 crepes in the month of January, and people stand outside and wait."
They're waiting for crepes filled with everything from ham and Gruyere to fruit and cream. So far, Lea says, the favorites have been the Monte Cristo and the Smore's.
Adding to the flavor is the fact that Lea makes the crepe to order. "I am cooking right in front of you," she says. "You can't get fresher than that."
Or much cheaper. "I discovered while traveling in Europe that if you stand up and eat, you generally pay a third less than when you sit down," Lea points out. "I believe people feel that they're getting their money's worth."
Crepes on the Go is open from 11 a.m. to 6 p.m. Monday through Thursday and on Fridays and Saturdays from 11 a.m. to 9 p.m. The hours may expand as the weather improves.
