Hosea Rosenberg's Streat Chefs aims to take mobile global

Think global, eat mobile, urges the Streat Chefs website.

"Street food is the next fast casual," says Rice matter-of-factly. She recruited Rosenberg to help her build an empire, and while "we're starting in Boulder, we want to move into mid-sized college towns all over the country."

But first, Rosenberg and Rice will roll out their inaugural trailer on June 28 at Boulder's Chautauqua Park, at a celebration offering kickball, cooking demos and a fixed price sampler menu. The park will become a regular stop for the pair, as will weekly appearances at the 29th Street Mall, the Louisville Street Faire and a couple of local businesses. They also intend to sell from their commissary, which is located on 55th and Arapahoe in Boulder, in an area rife with office buildings and devoid of many lunch options beyond fast food.

The Top Chef plans to sell his own twists on global cart favorites, from tortas to banh mi, plus seasonal selections that come from local Boulder farms. Roasted beets with goat cheese, for instance. And gazpacho.

"We want this to be an evolving menu, like any good restaurant," says Rice, "We want people to be able to eat here twice a week, every week, and not get the same thing."

As for going with a trailer rather than a truck, Rice, who once did product development for Target and Crocs, says she chose Airstream because it "fits the Boulder outdoors style."

Today, Boulder. Tomorrow -- or not long after -- the globe.
