Rudy's Country Store and Bar-B-Q is now open in Colorado Springs

Piles of soft brisket, stacks of white bread and paper towel napkins are in store at Rudy's.

Rudy's is bringing its tender, oak-smoked meats, Texas sensibilities -- oh, and a gas station -- to Colorado. The crowd-friendly Texas-based barbecue chain opened its first Colorado location yesterday at 315 South 31st Street in Colorado Springs.

Rudy's Country Store and Bar-B-Q takes homestyle to heart, with long picnic-style benches, paper towel dispensers on the wall, no plates in sight, as much white bread as you want and orders by the pound (or half-pound) only. "Rudy's follows the traditional way of eating real Texas barbecue, which is eating it on wax/butcher paper," says spokesman Joe Vasquez. "There are no paper plates."

The menu features brisket, ribs, chicken, turkey and two types of sausage, which you can watch being cleaved before your eyes in the open kitchen. Sides include usual suspects like potato salad, pinto beans, coleslaw and corn. For dessert, Rudy's serves up Southern faves like banana pudding (Nilla Wafers included) and buttermilk pie.

Like most Rudy's, the Colorado Springs location is paired with a gas station, capping off that down home feel.

Through tomorrow, the restaurant is doing some giveaways for Facebook friends and Twitter followers. Later this month the restaurant will host a "community building" event in honor of its opening, Vasquez says.

Hours are Sunday through Thursday from 7 a.m. to 10 p.m. (breakfast barbecue, anyone?) and Friday and Saturday from 7 a.m. to 10:30 p.m. For more information, call 719-471-4120.
