Oskar Blues does it The Old Chubway

Oskar Blues already runs its original Grill & Brew in Lyons, the Tasty Weasel Tap Room in Longmont and Oskar Blues Homemade Liquids and Solids, a full-service restaurant that opened a year ago this month in Longmont as well.

Located in the same complex as the Grill & Brew, The Old Chubway, 303 Main Street, serves a line-up of giant burritos, mac 'n' cheese, smoked beef brisket, chicken and pork, sandwiches, salads, home made root beer and desserts -- lots of desserts. The restaurant features ice creams -- some infused with beer -- made by Ice Cream Alchemy in Boulder.

"There was a need for a quick in-and-out, grab-a-bite-to-eat place in town," says Oskar Blues spokesman Chad Melis. "Everything else is a sit-down option." Melis says he's expecting everyone from locals, tourists and high school students to people who come up for the day to hit the local mountain biking trails or kayak the St. Vrain.

"It's great if you are in a hurry. It fills a void here."

As for the names, Melis says Oskar Blues's theory is simply to have fun. "That is [owner] Dale Katchis's theory on life in general. He is a funny guy with a good sense of humor."
