It's challenging to open a restaurant in Boulder, which already has so many good spots that Bon Appetit named it the foodiest town in America, but Bradford Heap, owner of the successful Niwot restaurant Colterra, was no amateur.

And when the massive spot that had housed Tom's Tavern became available, he snapped up the space to create his own eatery in the People's Republic, Salt the Bistro, at 1047 Pearl Street in Boulder.
