Pork peddler Chad Clevenger is launching a second street-food cart and rolling out a food truck

Chef, restaurateur and pig pusher Chad Clevenger, who already pimps fine swine from the Porker cart at Seventeenth and California streets, is gearing up to add a second cart to his repertoire, followed by a bona fide truck.

But the new cart, which will also be located at 17th and California streets -- just a snout's toss from the Porker cart -- won't be pig-centric. Instead, says Clevenger, he's working on an Asian-inspired mobile machine that'll be a joint collaboration between him and a friend, who owns Koi restaurant in Santa Fe. And if everything goes according to plan, it will roll out before the end of the year. "It's gonna be Asian cuisine across the board -- Vietnamese, Chinese, Japanese, Thai, Korean -- and we'll make whatever we come up that week, maybe some kimchi pancakes, or pho, or whatever else we feel like playing with," explains Clevenger.

The truck, however, will be an extended version of the Porker cart. "My investor has basically bought the truck shell, and it's currently in the shop being built, but when we roll it out in February or March of next year, it'll have the same menu as the cart, but we'll bump it up a bit with a few more menu items and specials," says Clevenger. The truck, tricked out with a fryer, flattop, oven, stove and grill, will allow Clevenger to to be more innovative with his dishes. "The Porker cart only has two induction burners and two steam tables, but the truck is very well equipped, which will give me the opportunity to be a lot more creative."

Clevenger is still scouting locations for the truck, but says that he'll definitely do late-night wheeling Thursday through Saturday, until at least 2 a.m. "We're going to play it by ear, test the waters and roll up wherever we're welcome, but we'll for sure do a late-night menu to drum up business," he promises.
