Last December, we embarked on a culinary sojourn that took us through our favorite dishes in the Mile High City -- one hundred, to be exact -- as a precursor to the Best of Denver issue. Now we're back with round two, counting down (in no particular order) a hundred more of our favorite Denver dishes in a list that, by our imperfect calculations, should be wrapped up by the time the Best of Denver 2011 hits the streets on March 31. No. 97: Queso a la plancha taco from the Pinche Tacos wagon

Pinche Tacos, one of Denver's first food hustlers to strap its wheels to the burgeoning street-truck movement, does a bang-up business, doling out, as fast as the taco slinger's fingers will allow, corn tortillas bumped with smashed potatoes, chorizo, scrambled eggs, carnitas, caramelized onions or roasted green chili hollandaise, which makes breakfast all too easy to swallow.

But while those breakfast tacos are undeniably terrific, it's the lunch tacos -- specifically the vegetarian queso a la plancha taco -- that are my never-ending obsession. The tortillas -- made locally -- are slapped on the griddle and surfaced with a lacy orb of salty cotija, griddled until golden, and topped with avocado and a lob of tart tomatillo salsa, with limes on the side. All the tacos leave us wanting for more, but these are the shock-and-awe version.
