Fleur Bistro to open tomorrow

Fleur Bistro has sprouted on Logan Street

Owner Bart Jones says he'd originally hoped to open in early December (a desire echoed in the sign above), but inspections pushed the date back.

Jones grew up in Colorado before heading East for school. He tended bar and waited tables in Boston and New York, then returned to Denver to team up with Andrew and Eva Esparza in order to open Fleur. The three brought in Nate Boothe, formerly of Shanahan's and Brio Tuscan Grille, to be the head chef. "People in the neighborhood have been excited," he says. "So hopefully, we'll get some people in here and do all right."

Fleur will serve healthy, casual American cuisine that has a little French influence, Jones continues. The restaurant will do so for breakfast, lunch and dinner from 6:30 a.m. to 10 p.m. on weekdays and 6:30 a.m. to 11 p.m. on weekends. The dinner menu includes dishes with a continental feel, including a steak and tuna tartar combo as an appetizer and New Belgium braised duck and white wine-poached salmon entrees. A modest wine list features glasses and bottles from around the world, with most bottles in the $20 to $40 range.

The dining room, which is light and airy, seats forty to fifty, while a private room for parties doubles the capacity. Come warmer weather, a patio will add another twenty seats. "With Boothe and the location and the space, I think we have a pretty good chance of making it," says Jones.
