5th Sun rises on Speer Boulevard

Trudy Gonzales had never owned a restaurant before she opened 5th Sun Cafe & Lounge at 3024 Speer Boulevard. "People love my food, and they bugged me and bugged me to open a restaurant, so I finally decided to just do it," she says.

The name, she explains, is translated from the Spanish "quinto sol," which comes from the Mayan calendar and represents change for man and humanity. She describes the restaurant, which opened its doors on January 27, as a "Colorado-Mexican" spot.

"There are a lot of New Mexico, Mexico or Texas Mexican restaurants in Denver," Gonzales explains, "but there's nothing really local that's been brought up here, or at least not very many places. And none of those put a healthy twist on it."

At 5th Sun, she serves such regional favorites as mole and green chile, but Gonzales also hopes to prove that Mexican food can be healthy and tasty at the same time. "We don't even have a deep fryer," she admits.

The restaurant is currently serving breakfast, lunch and dinner Monday through Saturday from 7:30 a.m. until 8 p.m., but those hours may change after the place gets its liquor license (and fulfills the "lounge" part of its name), which is still pending. In the meantime, beverages include espresso and coffee imported from Mexico. And at some point, Gonzales says, she hopes to introduce a Sunday brunch.
