StrEat Chefs calls it quits -- but chef Hosea Rosenberg is looking to open a Boulder restaurant
When Laura Rice and Top Chef Season 5 winner Hosea Rosenberg started hawking sexed up versions of global street food last year from their tricked-out Airstream trailer in Boulder , they had plans to take their concept national.
"Street food is the next fastcasual," Rice told us at the time. "We're starting in Boulder. We want to move into mid-sized college towns all over the country."
Alas. Rice and Rosenberg have decided to garage StrEat Chefs in pursuit of other projects.
"Things were going extremely well, but we had a lot of problems with where we were allowed to conduct business," Rosenberg explains. "It's getting better, but we needed those rules last summer."
He explains that mobile food operators in the city of Boulder weren't allowed to vend downtown unless they were catering a private event or set up for a festival. Which meant that, by and large, food trucks were relegated to office parks and parking lots in the outskirts. And that just didn't work for the StrEat Chefs concept.
"We're an urban concept," says Rosenberg. "We wanted to have multiple trucks, but we wanted to be based in Boulder."
Still, the chef says the whole crew is sad about the closure, particularly since they're leaving a lot of fans behind. "It was a great learning experience," he says. "We had a lot of fun."
So what's next for Rosenberg? "I'm ready to put my roots down again. I'll be opening a restaurant in Boulder in the near future, hopefully by the end of the year," he reveals.
His lips are sealed as to exactly where or what that will be, but he says things are already in the works.
