Tres Pupusas opens today in Boulder

For the past two years, Cindy English has hawked her pupusas from among the vendors that line the sunny path at the Boulder Farmers' Market, and last year, she expanded her operation to the frozen-foods section of Whole Foods, beginning with the Pearl Street store and eventually making her way into a dozen regional outposts of the market.

And today, her Tres Pupusas Cafe officially opens for business in Boulder.

The cafe fronts the wholesale operation center, a small "eight- or nine-seater," according to Cindy's husband, Jason.

"We're back in an office park behind Boulder Beer," he explains. "But there aren't a lot of places for lunch back there." Except for this one, now open weekdays from 11 a.m. until 2 p.m. It will sell English's original cornmeal pupusas, which forgo the traditional lard and come stuffed with things like beans, cheese, leeks, carnitas and green chile. And in addition to pupusas, "we're selling Salvadoran tamales, pasteles and agua frescas," Jason says.

Tres Pupusas will continue to appear at the Boulder Farmers' Market on both Wednesdays and Saturdays, and when the Cherry Creek Fresh Market opens in Denver, it'll hold down a stand there, too.
