Bombay Bowl opens on Lincoln Street -- with Indian street food added to the menu

Bombay Bowl, a fast-casual curry joint that got its start in Centennial in 2009, just opened a second store this week in the mini-mall at 575 Lincoln Street that already houses Jamba Juice, Sonoda's, Il Vicino, Chipotle and Noodles & Company.

"We wanted to try our concept in a more urban neighborhood, and there's a lot of visibility in this location, plus it's definitely the demographic we target," owner Amar Singh told Lori Midson last month, when he was still renovating the spot that had held Daphne's Greek Deli.

The menu has been expanded from the version offered in Centennial to include Indian street food -- specifically aloo tikki chaat and samosa chaat, along with rotis and sandwiches, all made with naan -- which is a welcome development after the closing of both Mirch Indian Grill locations. But Singh is still holding to the basic question that inspired Bombay Bowl: "How can one make Indian food that is fast, fresh, healthy, affordable and approachable?"

The answer, he says, was simple: by deconstructing dishes Indian people eat everyday without losing flavor, and educating customers about the different ingredients and sauces as they order.

This is just the start of Singh's Indian empire-building. By the end of the year, he hopes to open in Boulder. In the meantime, here's a look at his new spot:
