Prohibition moving into former Roslyn Grill space

The Roslyn Grill was always one of Denver's most colorful dives, both in its original location on 14th Street and then when it relocated two decades ago to 504 East Colfax Avenue. The Roslyn closed for good early this year, but the space will soon be resurrected as Prohibition.

"I feel that this area needs a good, classic bar," says Prohibition owner Jimmy Callahan. "A place where you don't feel like you need a shower when you leave, but it's still not pretentious. I've been up and down the neighborhood, and there are lots of different types of bars, but not anything like this."

Since Callahan took over the spot in February, he's been "overhauling it without having to do too much," he says, putting in new lighting and a new wood floor, as well as installing a bar that came from a hundred-year-old saloon in Indianapolis and a new mahogany bar in front with a Chicago drink rail -- key, Callahan explains, because you have to have a place to put your arms.

In keeping with the bar's name, the place will sport some newspapers from the Prohibition era, as well as a bunch of whiskey prescriptions.

Unlike at the Roslyn, there will be food at Prohibition. The menu, which Callahan says he wanted to keep simple so that people will remember the joint is still a bar, will include made-to-order pot pies, burgers and braised short ribs.

Look for Prohibition to start serving at the end of the month.
