Now open: Peacock Restaurant and Bar brings more Ethiopian food to East Colfax
East Colfax is home to several Ethiopian restaurants, and another joint just opened near the corner of Colfax and Quebec: Peacock Restaurant and Bar, which, says owner Eden Habte, is unaffiliated with the other Ethiopian spots in the area.
There, in a dark dining room painted gold and infused with the scent of simmering berbere-heavy stews, Habte is serving Ethiopian specialties, including lentils, beef tibs and a variety of wots, an Ethiopian stew.
Although the restaurant officially opened back in June, a grand-opening buffet celebration was held over the weekend. Habte says she's still adjusting her recipes (as well as her prices). For more info, call 303-377-1880.
