No. 58: Gazpacho verde from Zolo Grill

Years ago, when Lola, the coastal Mexican restaurant in Highland, was thriving in its original location on South Pearl Street, I'd haul my butt in once a week for the heirloom tomato gazpacho, the recipe of which I'd convinced the chef to part with. I still make it at home, but now I'm desperate for Brett Smith's gazpacho verde recipe.

Smith, the chef at Boulder's Zolo Grill -- a sibling restaurant of Lola -- creates a very different gazpacho from the one I fell for at Lola, a soup so delicious that after tonguing the bowl clean, I sheepishly asked if I could get a vat of it to take home. The preparation of charred tomatillos and roasted poblano chiles, cilantro, cucumbers and parsley, pureed until smooth and shimmery, like the shine of rain on the vine, sings like the birds of summer, and the cucumber sorbet, specked with chiles, and wreathed with chile oil, should be sold by the carton. If this is all I are for the duration of summer, I wouldn't have a guilty bone in my body.
