No. 57: Hama Hama herbed oyster from Jax Fish House-Denver

Purists will insist that fresh oysters need no adulteration. Dispense with the cocktail sauce and the Mignonette, they'll demand. And for chrissakes, never, ever cook them, they'll tell you, shuddering at the mere thought of oysters Rockefeller; only the squeamish order them fried. And for the most part, I'm in agreement with these musings, and so is Jax Fish House, which hustles fresh, cleanly shucked, briny oysters by the boatload, their exposed flesh scented with nothing more than the purity of the exotic sea. But there are rules of exception -- even for purists.

To wit: The Denver fish house's Hama Hama oyster, the fat mollusk floating in a tidepool of classic buerre blanc, its body festooned with translucent orbs of salmon roe, verdant microgreens and judiciously scant shavings of black Périgord truffles. It's the definition of ambrosia, and proof that life is better on the half shell.
