Virgilio's pizza stretches to accommodate vegan and vegetarian needs

If you've been to Virgilio's, which took over a massive spot at 10025 West San Juan Way in Littleton for its second (and now, only) location, then you no doubt already know about the garlic knots. Although they're not vegan -- the knots are brushed with garlic butter before they are baked -- vegetarians seeking a garlicky piece of heaven will want to go ahead and order the full spread. You won't regret it.

The restaurant has never been slow on the many occasions we've stoppedin; there's almost always a wait, with families and couples checking out the vintage family photos decorating the foyer. We'd suggest picking up a menu to peruse it while you wait -- because even if you're sure you know what you want, there are so many options to tempt you that we bet you'll change your mind.

Besides the garlic knots, the one menu item in which we always indulge is a side salad with the house-made balsamic vinaigrette. The dressing is thick and tangy, and if you order the salad without cheese or croutons, it's vegan-friendly, too.

The pizza, though, is where we always get held up. Virgilio's serves vegan-friendly, dairy-free cheese, but what to get on top? We've gone with pineapple and cilantro, or sun-dried tomatoes and green olives, among other flavor combinations; all we can say is, nothing we've tried there has been terrible, given the crisp, thin crust and mouthwatering sauce smeared on the pizzas. There are several specialty pizzas that are vegetarian-friendly, too; we swapped out the cheese for the dairy-free version on this Veggie Lover's, which also has mushrooms, green peppers, red onions, black olives and spinach. Classic and delicious.

Virgilio's also has lunch specials from 11 a.m. to 3 p.m. Monday through Friday, and the massive dessert tray -- not vegan-friendly, sadly -- will make you swoon with delight. Call 303-972-1011.
