Aaron Lobato says that he, his brother Andre and their business partner, Joey Newman, have several concepts already written should the perfect opportunity to open another restaurant come along. And last summer, a couple of years after they opened Interstate Kitchen & Bar on Santa Fe, they got the chance to take one of those concepts for a spin.

The trio inked a deal on the former home of Mona's on South Broadway, then quickly got to work on what they call "Boss Italian," an homage to 1970s-era Italian steakhouses. After a makeover that included adding a massive bar to the center of the space, Crimson Canary opened in October.

For this week's review, I stopped by the new joint, eating my way through a menu that supplements tricked-out old-school Italian dishes with hipper, more modern fare as well as a fairly serious salumi list, full of rotating meats and cheeses from purveyors located all over the country.

Is a meal here an offer you can't refuse? Find out tomorrow, when the review is posted here.
