Santiago's bets that green chile can heat up Bullwhackers Casino in Blackhawk

Santiago's, the homegrown burrito chain that makes what might be the best green chile in Colorado, is trying its luck at Bullwhackers Casino in Blackhawk.

The ever-growing institution opened two locations inside the casino on the day after Christmas: a full-service, 64-seat restaurant on the top floor, and an express service on the mezzanine level that is open from 9 a.m. to midnight.

Both will feature the same full menu offered at the chain's other 22 restaurants, including breakfast burritos, fajitas and stuffed sopapillas.

"We are pleased to provide our guests with a new and unique dining option," Steve Lambert, vice president of operations for the casino, said in a statement. "Bullwhackers will feature the only Mexican restaurant in Black Hawk or Central City. We believe that our partnership will offer guests an incredible dining choice at the best price point in the area."

The Santiago's innovations don't end there. The chain teamed up with Good Times last fall on some featured items at the hamburger joint, and recently took over a former franchise location at 180 West 84th Avenue in Thornton, reopening it as a company-owned Santiago's.
