When Rayme Rossello first announced her plans to build Comida Cantina, a stationary extension of her mobile concept, in Longmont, she had big plans for brunch: "In my dreams, I'd love to do a 9 to 5 service that's old-style Mexican: long, leisurely, pork dinners and whole roasted chickens served family-style," she told us.

When she launched in February, though, she unveiled just a dinner service until she could get rolling. But now that her taqueria is nearly two months old, she's getting ready to make good on her big brunch ideas, albeit in a slightly altered form from her original plan.

Two weekends ago, Rossello unlocked the doors for brunch on Saturdays and Sundays starting at 9 a.m., with a menu that includes such items as Mexican chocolate pancakes, chilaquiles, breakfast tortas stuffed with eggs and bacon and served with jalapeño hash, and oats soaked in cinnamon almond milk. Those entrees pair to a drinks board that, like her regular beverage menu, offers up freshly made licuados and juices as well as some morning cocktails, like the tequila-infused bloody Maria and the Comosa, a mimosa injected with grapefruit ginger syrup.

It's an impressive menu, but Rossello has bigger plans: Starting this week, Comida will host a weekly hip hop brunch. "We are going to do it every Sunday," she says. "My friend Zach Johnson is from LA, he's super cool, and he's going to come in and DJ."

And while she promises that it will be a party, she also swears that this hip-hop brunch is meant to be entertaining but not uncomfortable. "You know, it's breakfast," she says. "We're going to get as groovy as we can, but we know people want to eat."

The doors will still open at 9 a.m.; Johnson will play from 11 a.m. until 2 p.m.

Need a Comida fix on a weekday? Rossello also unveiled lunch this month, which means she's now serving up the regular taqueria menu starting at 11:30 a.m. Tuesday through Friday.

As for her original weekend plans, they may still come to fruition -- but not immediately. "We're not doing a full Mexican Sunday dinner yet because we're doing brunch instead," she says. "I want to do it, but Sundays are sort of busy as it is."

Is the former Masters winner Zach Johnson gonna spin records sporting his Masters Green Jacket? I hope so.

PLEASE... by hip-hop you mean hip-hop right. Not this bullshit music that is popular right now. Can we get a playlist? I'll have to call in then make it to Longmont and I would hate to hear Lil Wayne, Kanye or any of these other pathetic "artists" while trying to enjoy my scramby eggs.
