Fired Up, a new pizza joint, will open in former Chances space

Fired Up will open in the former home of Chances (which relocated to LoDo last month) at 1135 Bannock Street.

"We'll offer gourmet pizzas made from as many locally- sourced ingredients as possible," says owner Josh Barhaug, who just got back from a reconnaissance mission in Europe, where he and his wife drove around in an RV eating pizza.

"We wanted to go a different route than the Neapolitan-style that seems to be popular here in Denver," explains Barhaug. "We'll have gourmet burgers as well."

Fired Up will have a full liquor license with local craft beers and keg wines on tap. Barhaug says they hope to have the place open by the end of May.

WTF is up with all the new pizza joints opening up all of a sudden??  I thought the upscale burger, cupcake, and DIY frozen yogurt trends were something, but I think the influx of pizzarias has surpassed all of them.  That said, I'm all for new GOOD pizza places, and I am hoping that more than a few of these new ones prove out and survive.What's next?

There's a restaurant in Ho Chi Minh City (Quan An Ngon) that is basically a central seating area ringed with food carts. You sit down, get a menu, a waitress takes your order, and then the various food carts make the food. That's what I would open here. You would have huge variety, you could rotate different food in and out, and the build out would be cheap, because no kitchen. Do a 50-50 revenue split with the cart operators. You'd basically be subcontracting out the entire back of house operation.
