A word (or several) about paella:  First of all, it's all about the rice (Italian arborio rice is a good substitute if you can't find Valencia rice), and Spanish rice dishes -- in this case, paella --  are not all the same, with the exception of the mandatory use of medium-short grain rice. The most popular paella is cooked in a shallow pan that's wide and flat -- and, yes, the rice is usually cooked until it absorbs most of the liquid. That said, paella can also be made in a cazuela and the results are much wetter; rice that's cooked in a caldron is "soupy." All, however, are variations of paella. And, yes, there was plenty of saffron in this one.

 And despite all the complaining in the comments here, Solera's atypical version is hands down the best paella anywhere in the area. I'm glad they've added it to the regular menu, it used to only be a special.

Just a guess based on the fact that the former sous chef at Oceanaire is now at Ambria.

The pic is nice,but a soupy rice plate  with seafood and may be some saffron, very red tomato broth,well i will call that dish  cioppino    or Bouillabaisse with rice but can not be named paella,the real Paella is not soupy,not red like the one you show in the pic and the chives on top well...may be very author or americano style
