Snarf's Sub Shop opens its new DU location with a bar, breakfast and Infinite Monkey Theorem wines

The fact that Snarf's, the Boulder-based sub shop that's generated a cult following, has unveiled its eleventh location in Colorado isn't exactly the most groundbreaking news on the culinary front, but then again, this Snarf's, which just opened near the University of Denver at 1729 East Evans, in the former Trompeau Bakery space, lays claim to the homegrown chain's first full bar in Colorado. "We were lucky that we had the space to build a real bar," says James Siedel, who opened the first Snarf's in Boulder in 1996. "The layout lent itself to a bar, we had the desire and will to do it, and it's the kind of neighborhood that wants it," he adds.

And while the draft selections are woefully pedestrian, save for Dale's Pale Ale (the rest of the roster includes Fat Tire, Coors Light, Blue Moon, Guinness and PBR), and the Jägermeister tap machine cautions that the bar is geared toward drunken collegiates, there's a surprising twist behind the stick: There are four taps, all of which dispense Infinite Monkey Theorem wines. "I love IMT wines, it's local, and Ben Parsons does a great job. We feel really lucky to have his wines in this location," says Seidel, noting, too, that the sandwich shop also stocks 35 different bottled beers.

It's serving breakfast, too, which, up until now, has only been available at the Spire location. There's also a back patio with a fire pit, as well as floor-to-ceiling windows in the dining room that open to the streetscape. "This store is a really great-looking space," says Seidel, "and we're super-excited to be here." Seidel is working on two more Snarf's, as well, including one at 38th and Clay and another at Sixth Avenue and Clayton, in Cherry Creek North.

I stopped by the DU Snarf's over the weekend to snap some photos and grab a breakfast sandwich, which was all about the pig. Herewith the pics.

What ever happened to the planned Snarfs at 38th and Zenobia?  That place has been boarded up for well over 2 years now.
