Beehive opens in Boulder tomorrow

It's been nearly a decade since the farm-to-table Beehive had Denver diners buzzing. (It occupied the spot now filled by Table 6.) But chef/owner Janice Henning is now putting the final touches on a brand-new Beehive -- this one right off Boulder's Pearl Street Mall.

After having twin boys, Henning explains, she needed a break from the rough-and-tumble restaurant business. But the Beehive concept was never dead, only dormant, and once the right space presented itself, "I wanted to get back to the stove," Henning says, "because that's what I love to do."

The Boulder Beehive will share the original Beehive's emphasis on seasonal and local ingredients and straightforward, American-style cuisine. "Great ingredients, presented in a simple manner," Henning says, explaining Beehive's raison d'être.

The Beehive will quietly open for dinner tomorrow, with weekend brunches and lunch to follow. Happy hour, which will run from 3 to 5 p.m. weekdays, will include cocktails made with fresh juices and rotating plates of whatever catches the chef's fancy.

The Meadows shopping center is just DYING for some decent food options.  Korean BBQ would be awesome, but just a legit place to grab dinner and/or a drink would be welcome.  It's a wasteland out there, won't somebody save us?!?!?!

I would KILL for a legit Korean BBQ place.  Seriously.  Probably wouldn't work downtown because of the high rent, but somewhere on north 28th Street, the Meadows Center at Foothills & Baseline, Table Mesa Shopping Center or similar a good Korean BBQ joint could do great business.  Anyone looking for a restaurant idea, take note!

Agree with Monopod's posts: same-o same-o menu as everyone else on The Mall. I don't hit the similar places often due to them all being pretty much the same menu-wise. And not changing up their menus much. It's summer and hot out, at least tweak the menus a bit to not have heavy dishes that are better for fall/winter.

 Agreed.  It would also be great if they offered breakfast, something that is lacking in downtown Boulder.

Looking forward to checking it out, but I hope they do something to differentiate themselves from the pack.  Emphasizing "seasonal and local ingredients" and presenting them in a "simple manner," while laudable, is kind of the price of admission to the Boulder restaurant scene; everyone already does that (just to take a few examples, Kitchen, SALT, Oak, Black Cat, and Riff's all have exactly the same emphasis and all are located within a couple of blocks of Beehive's new digs).  Hopefully they can do something that will set them apart, perhaps by making their food actually affordable (not just offering "small plates" that are 3 bites of food for $8).  We already have plenty of lovely-but-expensive farm-to-table places, it would be great to have more offerings where people could enjoy them more than once or twice a year.

 Totally agree. I actually went last night (opening night) and it reminded me of a blend of Oak/The Kitchen and the new Bramble & Hare. What we had (just apps) was really fresh and delicious, but it needs to stand out and be incredible to keep up with the packs. Why doesn't Boulder get some legit Korean BBQ or something different? :)

Just saw the menu for opening night... sigh.  $8 bowl of cucumber soup, $19 cheese plate, $18 softshell crab sandwich and $24 mains (duck confit, pork belly, quail).  I wish them well, but I can't see how they're going to distinguish themselves from the myriad other, nearly identical options around the corner (with better locations).  Seems like a missed opportunity.
