Prost Brewing sets an opening date in August

Prost Brewing has announced an opening date of August 23. The LoHi-area craft brewery will focus on German-style lagers and began brewing them in early July; lagers typically take six to eight weeks to prepare.

Prost is one of three Denver breweries that plan to open in August; another seven to ten beer makers across Colorado have already opened or announced their intentions to start serving suds by the end of 2012. Last month, however, Prost revealed that its Weissbier will be served on tap at several local beer-themed restaurants around town before the brewery opens.

In the meantime, construction continues in the two-story brewery and taphouse, which features an enormous copper brewing system that head brewer Bill Eye and the owners of Prost bought from a brewery in Germany and shipped to the United States via boat.

When it opens, Prost will feature a gravel-lined beer garden with long wooden tables, German memorabilia and German-style beers on tap, including the Weiss, the Dunkel and a Pilsner. The brewery will never have more than three or four styles on tap at a time, in addition to a guest beer. It will also serve some traditional accoutrements, including sweetened lemon syrups, apple juice and colas.
