Larkburger lands in Northglenn...with a new BLT sandwich

Larkburger, the homegrown chain that chef Thomas Salamunovich started in Edwards in 2006, has added an eighth location to its flock. A new Larkburger opened today at 11985 Washington Street in Northglenn -- and an eager crowd of fans was waiting to get a crack at the menu.

That menu has a new addition. I ran into Larkburger spokeswoman Aubrey Cornelius as the store opened, and she gave me the skinny on an item being introduced at this spot: a BLT sandwich made with thick-cut, applewood-smoked bacon, lettuce, tomato, onion and a special house sauce. When I asked what made that sauce special, she replied, "It's all secret."

The rest of the menu is the same as at the Boulder and DTC locations, which feature the recent additions of Black Angus red chili (served with fresh masa chips) and the chicken burger (adobo-seasoned chicken breast with chipotle sauce and crispy jalapenos). And then, of course, there's the rest of the Larkburger lineup, including the juicy, seared ahi tuna burger with wasabi-ginger dressing; the Amy burger with a roasted portabella mushroom; and the third-pound Black Angus beef truffle burger slathered with truffle aioli, which pairs perfectly with the signature truffle-and-parmesan fries and truffle-scented, housemade ranch dressing, for the triple truffle effect.

The new store has the same naked wood paneling and minimalist decor as the other locations, and the same eco-friendly plateware and recycle bins. But for a limited time, it also has its own new-store smell.

And Larkburger isn't done expanding: The company will be opening a ninth store in downtown Denver, at 1617 California Street, this November.

I like their regular burgers, but the seared ahi tuna burger is what I come back for.  As far as I'm concerned, ahi should be served pretty much raw in the middle (otherwise it gets very dry very quickly), and that's what they do.  The wasabi in the sauce combined with the raw-ish tuna makes for what tastes like a sushi sandwich.  Yum.
