The dishes of Dish: Le Grand's chicken liver mousse and lamb ribs

Le Grand Bistro & Oyster Bar was just a few months old last September, but owner Robert Thompson somehow found the time and energy to be a part of Dish 2011 -- our first outside dining event (after seventeen years inside!), and also the first one for which Cafe Society scribes invited their favorite restaurants to participate.

Le Grand will be back at this year's Dish, set for Thursday evening, September 6, in the Sculpture Park at the Denver Performing Arts Complex. And Thompson provides the dish on what Le Grand will be serving this year:

What will you be serving at Dish?: Two dishes. Chicken liver mousse with pink peppercorn white wine aspic, which is on the regular menu. And beer wort braised Colorado lamb ribs with candied walnuts, pomegranates and sweet carrot.

What's your favorite dish on your regular menu? Cotelette d'agneau et flageolets: Colorado lamb chops, flageolets, heirloom tomatoes, baby potatoes, tri-colored carrots, roasted fennel.

Bonus question: What's your favorite thing about the Denver dining scene?

The Denver dinner's evolution has grown exponentially over the past five years. Our local chefs have been on equal footing with those in much larger cities and food scenes for a while, but now the diners themselves are with us, demanding that we remain creative as owners and chefs, and push Denver's food scene faster and further. It's been amazing to be part of these recent years.
