Which 'Wich? is a chain which has vegetarian-friendly options

Although Colorado is home to some veggie-friendly chains (Chipotle, Garbanzo, etc.), we're never sure about chains that originate in other states. Which 'Wich?, which got its start in Dallas, was one of those unknown quantities -- but now we're happy to report that it offers more than one vegetarian version of its brown-bag speciality sandwiches.

The Aurora location on Cornerstone Way is surrounded by several more chains: Tokyo Joe's, Panera, Five Guys, Red Robin and Maggie Moo's. At noon on a recent weekday, the eatery was just gearing up for the lunch rush, and although there wasn't a wait when we lined up to submit the marked-up brown bags that indicated our order, by the time we were through the line and found a seat, things were starting to pick up.

Vegetarian options include caprese (tomato and mozzarella), tomato and avocado, hummus, Mediterranean and a black-bean patty (which contains egg and dairy, so it's not vegan-friendly). We went with a tomato-and-avocado combo on wheat bread (all the bread is vegan-friendly) with mustard, balsamic vinaigrette, caramelized onions, spinach, cucumbers, sauerkraut, oregano and crushed red pepper, all marked with a red Sharpie on that bag.

The toasted sub arrived quickly in the same bag. The caramelized onions combined with the avocado for the best part of the sandwich, and we wished we'd added some hummus for a little variety. But overall, it was a good lunch pick.

We were hungry enough that we ate the full large portion, but a seven-inch is more than enough to satisfy most lunchers.

I live across the street from a Which 'Wich store and I go there often. It can get a little pricey sometimes, but the sandwichs are huge and worth the price.
