Wild Eggs celebrates one year in Denver with a bow to the King, revamped menu
Elvis Presley Week begins today and runs through Saturday, August 18. And Wild Eggs -- the Kentucky-based breakfast and lunch chain that expanded into Denver last August, putting a store at 300 East Alameda Avenue -- is honoring his memory and its birthday with a week-long special on "The King Would Eat These": buttermilk pancakes topped with bananas, peanut butter syrup, chocolate chips and whipped cream for just $4.
"We're fans of Elvis's style and influence on American culture and a certain food trend," explains owner Mike Rothberg. "There was something very 'Southern, meet Western' about him, just like our menu."
That menu that now features five new items:
Country Fried Steak and Eggs -- marinated sirloin breaded and fried, topped with country style white bacon gravy. Served with two eggs any-style, skillet potatoes and an Everything muffin
"Yellow Submarine" Scrambled eggs -- yellow American cheese, grilled ham, apple-wood smoked bacon and mayo, served on a submarine sandwich roll with lettuce tomato and red onion.
Strawberry Tall Cakes -- buttermilk pancakes with fresh sliced strawberries, strawberry compote, powdered sugar and whipped cream.
Breakfast Nachos -- house fried corn tortilla chips, refried beans, poached eggs, chipotle queso hollandaise, sour cream, pico de gallo, jalapenos and guacamole. Garnished with green onions.
Housemade Cinnamon Rolls -- croissant pastry dough filled with butter, brown sugar and cinnamon, baked in a cast iron skillet and topped with house-made vanilla bean icing. Garnished with powdered sugar and cinnamon.
"Our roots are in Colorado," adds Rothberg, whose great grandfather settled in Denver about a century ago and started up Zell's Potato Company. "So it's great to have my brother's restaurant concept right here in our back yard. Year one has been so much fun that now we're scouting for a second location in Denver."
