Cured celebrates its first birthday by opening seven days a week

The residents of Boulder have spoken: They want their cheese and wine. And a year after Cured opened in that town, it's now expanded its schedule to seven days a week.

"We hit that one-year mark which was pretty excited, and we realized we got the store where we don't need to do the behind-the-scenes stuff as much," explains owner Will Frischkorn.

After traveling abroad for years Will and his wife, Coral, had developed a serious appetite for the fresh produce found in intimate neighborhood markets in Europe. To satisfy that craving, and also help others realize their passion, the Frischkorns opened Cured in August 2011.

Cured sells a multitude of handpicked products that the couple selected from their travels across the state, country and world. Their cheeses come in wheels and are individually sliced. Their cured meats are developed in specialty farms throughout the United States, including Colorado. Cured also offers select honeys, chocolates, olive oils, salts, wines and beers to pair with whatever it is that has you salivating from the second you first walk in. Not surprisingly, Westword awarded Cured the Best New Cheese Shop award in the Best of Denver 2012.

And while the Frischkorns love to travel, they're ready to stay put to handle the new hours and expanded traffic. "We're really focused on the holiday season," Will says. "It's fun to connect with people and get the opportunity to share the experience of food together."

Cured's new hours are 10:30 a.m. to 7 p.m. Monday through Friday, 9 a.m. to 6 p.m. on Saturday, and 11 a.m. to 5 p.m. on Sunday.

I walked by one monday, hoping to get one of their sandwiches -- which while not made to order are still the best I can find -- and they were closed.  Glad to hear that I no longer have to worry about that!And monopod, you need to go at lunchtime.  The bread has been there every time I stop in midday.

Yay!  Now hopefully they'll start stocking more of that insanely good crown boule bread; it's always gone by the time I stop by after work, making me a sad panda.
