It used to be that if I wanted stacked "Christmas" enchiladas, I'd have to haul my ass to Santa Fe, but there are a few restaurants in Denver -- or close to Denver -- where I can now satisfy my caving, including here, at this restaurant whose chef knows a thing or two about New Mexican cooking.
