CHUBurger from Oskar Blues will serve burgers, fries in Longmont in 2013

Oskar Blues will add to its small empire of eateries next year when it opens CHUBurger, serving burgers, fries, shakes and beer (of course) in Longmont, just a mile away from both its brewery and its flagship restaurant, Oskar Blues Homemade Liquids and Solids.

The craft brewery, Colorado's second largest, also owns the original Oskar Blues Grill & Brew and The Old Chubway, a quick-stop grubbery, in Lyons, as well as the OB Bonewagon, a food truck that prowls both Longmont and Boulder.

Like other Oskar Blues spots, CHUBurger, at 1225 Ken Pratt Boulevard, will serve pork and Black Angus beef raised at the brewery's own Hops & Heifers farm; the Longmont farm was inspired by the fact that many farmers buy spent grain from breweries to feed their cattle. And as one of Colorado's largest breweries, Oskar Blues had a lot of it.

"We have thirty head of cattle at Hops & Heifers and another 270 up north," says Oskar Blues chef Jason Rogers, referring to a Fort Collins ranch that partners with the brewery. "They are all grass-fed and supplemented with grain from the brewery."

The menu will also feature fresh-cut Kennebec potato fries, plain or in combination with roasted shoshito peppers, a fresh and spicy twist. And in addition to beef, it will offer bison burgers, salmon burgers and burgers made from its own Berkshire pork.

"This is definitely a fast-casual place where you will be able to get in and out in less than 25 minutes," Rogers says, adding that the concept is different from that of Liquids and Solids. "It's supplying a different need... a quality bite to eat that is not a burrito or a sandwich."

And it's something that could work in other cities as well, although Rogers wants to get this one right first. Over the past couple of years, Oskar Blues has been looking for spots for another restaurant or even another brewpub in Boulder, Fort Collins and Denver, but has so far been taking its time.

"We are still looking for the right space," Rogers says. "I love the Denver market. If we can find the right spot there and stick in some music, we will do it."

In the meantime, CHUBurger is scheduled to open in Longmont on February 1.
