In honor of National Cookie Day, EDGE Restaurant & Bar unveiled a twelve-foot Christmas tree made from macaroons today, at a reception introducing new general manager Matt Barber.

The tree will remain on display until New Year's Day.

The project was spearheaded by executive pastry chef Christopher Jordan, who -- along with his crew -- spent sixty tedious man hours gluing all the macaroons to the hollow structure. Not so coincidentally, January 1 is the pastry department's favorite day of the year, since that's when they move the tree to the loading dock and take a sledgehammer to it in order to get rid of holiday stress.

Jordan, a graduate from the Culinary Institute of America in Napa Valley, has been with the restaurant since it opened in 2010, and has celebrated the holidays there every year with a special treat.
