The comment, as I see it, is pointing out the fact that we copy trends from the coasts/Chicago instead of trying to invent our own in Denver. It would be fun to see some unique concepts created in Denver.

February, 2013— and at least three years after the trend hit elsewhere. Right on time for Denver.
@AceRanchero You should capitalize on your prognostication skills. Knowing what the big hits are means that you should be able to make a killing opening restaurants in Denver that are just beginning to emerge in bigger cities. You could have been the meatball king of the Front Range three years ago!
@Mantonat Good news, I predict the next big thing will be…TACOS! On a trip to NYC last fall, having lunches with two separate groups of friends, all they wanted to do was to go out to hot, new taco bars. Now there's something that we'll be ahead of the curve with.
Jensen's ego is bigger than the great outdoors. Why would he want to share camera space with the food at the restaurant?
Looks interesting, but I was hoping to see pics of the meatballs offered. Missed marketing opportunity, but may check it out.
