I don't make those things we call New Year's resolutions, but I am making a concerted effort to eat more leaves and vegetables in 2013, and this salad of roasted beets and arugula could quickly become a staple in my diet.

Can you guess where I'm eating?

Hops & Pie does serve an awesome beet salad.  The pistachio nuts are what really make it great.  And I'm not getting tired of it.

Frankly, who knows or cares?  If there is one single dish that is completely ubiquitous on Denver menus these days it's beet salads.  It would be easier to name a restaurant that doesn't have one on their menu.  This makes me sad because I love beets but give it a rest already.

@Denver Dave Everyone might have beet salads, but not everyone serves them in square metal trays lined with brown paper.

@BackOffImStarving @Denver Dave Mia culpa.  I wasn't suggesting the possible answer to Lori's query because I don't care where she encountered this salad (or how good it was or was not).  I was  just simply suggesting that perhaps the "beet salad phase" may be in danger of burning itself out - served in metal tray lined with paper or not.  Which, by the way, I would not consider a particularly attractive salad presentation.

@Denver Dave So what is more of a deal-breaker for you? A beet salad on the menu, or not offering free Wi-Fi? I'm sure all the local restaurateurs rely on your discerning taste regarding these matters.

This salad is definitely from Hops and Pie. It's delicious and worth caring.

@a_hughes @Denver Dave You've got the wrong Dave - I don't give a rat's patoot about Wi-Fi.  I think you're thinking Dave Barnes who is the Wi-Fi guy.  I love a good beet salad but when they are on every menu in town I worry that people will totally burn out on them and they'll go the way of the dodo bird and that would be a bad thing because beets are a pain to do at home - pink hands for days - lol.
