Udi's Cafe and Bar opens at Denver International Airport

Udi's Café and Bar opened today on the B Concourse at Denver International Airport -- the ninth location in this homegrown chain that emphasizes salads and sandwiches made with fresh, natural ingredients -- and Udi's artisan breads, baked fresh daily.

And Udi's has plenty of dough to spread around these days: Last summer, the family enterprise -- which started with the Sandwich Man, which Udi Baron and his wife, Fern, founded in 1994, and soon brought daughter Robin and son Etai on board -- sold Udi's Gluten-Free Foods, a spinoff of Udi's Healthy Foods, to Smart Balance for a reported $125 million.

Like the other Udi's spots, including the Udi's on East Colfax that opened in the former home of Encore last month, this one emphasizes vegetarian, vegan and gluten-free options -- and even has gluten-free beers at the full-service bar, which also includes specialty cocktails and ten kinds of absinthe from around the world.

Udi's is just the latest airport eatery to boast a local connection. Still to come this spring are restaurants connected to Root Down, Elway's and Steve's Snappin' Dogs. And according to DIA, we'll soon see many more: Over 75 percent of DIA's concession locations will transform over the next few years as leases expire.

Warum wäre das wichtig? Udi das Brot ist so trocken, dass nichts, außer einem neuen Rezept zu verbessern.
