Photos: Root25 takes root in the Hyatt Regency in the DTC
A new restaurant has taken root on the second floor of the Hyatt Regency in the Tech Center. Root25 Taphouse & Kitchen is a big step up from the standard chain-hotel restaurant, with locally focused fare, barrel-aged cocktails and a healthy kid's menu.
Partnering with such local vendors as Haystack Mountain, Breckenridge Brewery, Udi's Food and Grower's Organic, Root25 is providing a "playful exploration of the food and beverage offerings in Colorado," says Ben Hardaway, director of food and beverage.

And what will you find at Root25?
An early leader right out of the gate is the bison burger. Cooked over a wood-burning grill, the bison patty is covered with horseradish cheddar, fried jalapenos and topped with a sunny-side up egg. Served with "house cut Idaho spuds," it is available during lunch for $14.
Another lunchtime favorite is the HCBLT. House-cured bacon, lettuce, green tomato, apple-smoked cheddar and cippolini aioli arrive on a toasted, multi-grain bread. At $12, it's served with your choice of fresh fruit, kettle chips, root vegetable chips, house salad or spuds.

Served in a handcrafted wooden bowl, the chopped bleu cheese steakhouse salad is at the top of the salad options. Garden greens, all-natural flatiron steak, pickled carrot, chives, green olive croutons and Maytag dressing make a hearty, tangy feast at $14.
