The Kitchen Next Door, Snooze and a new restaurant and market from Alex Seidel will open in Union Station

Alex Seidel, chef-owner of Fruition, is opening a new restaurant and market at Union Station in July 2014.
Today, at 10:30 a.m., in front of the Oxford Hotel, Larimer Associates announced the names of three new restaurants that will take up residence in Union Station, the historic, century-old train depot that's currently being redeveloped by the Union Station Alliance.

A new restaurant and market concept by Alex Seidel, chef-owner of Fruition and Fruition Farms, along with The Kitchen [Next Door] and Snooze will all occupy the landmark train terminal in July 2104, and each restaurant will lay claim to an outdoor patio.

The Kitchen [Next Door] will occupy 4,432 square feet; Seidel's restaurant and market, the latter of which will feature fresh foodstuffs from his Larkspur farm and products indicative of Fruition's seasonally-inspired menu, will take up approximately 4,900 square feet; and Snooze's square footage will amount to nearly 2,000.

"This is an exciting first step in establishing Union Station as Denver's next great dining destination for both locals and visitors," says Jeff Hermanson, chief executive officer of Larimer Associates. "These award-winning restaurants represent the true Colorado experience and embody downtown Denver's genuine collaborative spirit," he adds.

"It's a dream to be creating a brand new concept in such a spectacular space," echoes Seidel. "We look forward to coming together with our neighbors at Union Station to make this a successful landmark for Downtown Denver and the entire state of Colorado."

The Kitchen, which originally opened in Boulder in 2004 -- and in LoDo in 2012 -- also operates the Kitchen [Next Door] in Boulder. "We're dedicated to creating community through food so there's no better spot for a second Denver restaurant than in the renovated Union Station," notes Kimbal Musk of The Kitchen Community. "We're thrilled to be part of this unique project where everyone is so dedicated to supporting Colorado businesses."

And Snooze, which has numerous locations in Colorado, and another outpost in San Diego, will serve breakfast and lunch daily at Union Station. "We're thrilled to take part in such a historic and special place in Denver. Doing this alongside such incredible restaurants is an honor and we can't wait to bring our energy and breakfast to this station," says Snooze owner Adam Schlegel. "The take-away aspect is unique to Union Station, an opportunity to serve so many travelers and commuters who will pass through Union Station daily."

Prior to leasing the restaurant spaces at Union Station, Larimer Associates conducted a series of open focus groups to help determine the public's wishes for the landmark property. "We consistently heard that Union Station is an iconic Colorado building with a rich history and that everyone wanted to see Colorado-based businesses in there," says Pat McHenry, leasing and acquisition partner at Larimer Associates. "This really resonated with us and was a great guide as we sought the hippest concepts and most talented chefs to anchor Union Station. Luckily for us, these restaurateurs are as excited about being a part of Union Station as we are."

The renovated Union Station project will also feature several other locally-owned dining and retail outlets, as well as 112-room luxury boutique hotel managed by Sage Hospitality.

This is great news and I don't see any issue w/ Snooze going in there. I know i'll want some awesome coffee and food to go while i'm taking the train out to DIA.  Very excited they chose all home grown restaurants for the facility. 


I guess I can see putting another Snooze so close since the Ballpark location is always packed.

Couldn't be more excited about Seidel's new venture.  If he isn't the best chef in town, he's certainly top three.  The fact that he's going to peddle cheese and other goodies from Fruition Farms there makes it even better.  This place sounds to good to be true.

I'm amped about the Seidel contribution to the project but I don't really see the need for another Snooze. What I was really hoping for out of the whole project is something that would rival San Francisco's Ferry Building Market - a place with multiple vendors of the highest quality representing true Colorado artisanal products.


Add a Joann Fabrics and it'll be a full fledged Highlands Ranch breeding ground!

Hot damn!  That sounds like a good collection... I just hope and pray that they finally abated the sewer gas odor that plagued all the other recent tenants of the 16th St. side (Red Fish, etc.).

I agree.  There's an old train station in St Louis that's converted to a market like the Ferry Building Market in San Francisco.  I'd like to see that in Denver, also.


Agreed. Like a downtown version of "The Source" going in up on Brighton Blvd.
