Original post: If you've done any reading about the hottest culinary trends, you'll likely find that the preservation process of fermentation is high on the list of chefs, food artisans and even brewers. And this weekend, on Saturday and Sunday, at the inaugural Fermentation Festival & Market, an event that unfolds at the HIghlands Masonic Center, the stinky magic of fermentation will be on display in just about every thinkable way.

The festival is the brainchild of Mike Burns, who also produces the Chef and Brew Festival, and it's the first of its kind in Denver. "We'll have extremely unique offerings -- everything from a sour-fermented honey kombucha, to traditional kimchi, to chef-inspired beers," says Burns.

Several breweries -- TRVE Brewing, Grand Teton Brewing, Sapporo, Our Mutual Friend Malt & Brew, Kokopelli Beer Company, City Star Brewing, Großen Bart Brewery, Yak and Yeti (Saturday only), Gordon Biersch, Verboten Brewing, Twelve Degree Brewing, Brewery Rickoli and Wit's End Brewing (Sunday only) -- are taking part, as are numerous distilleries, including Vodka 14, UK5 Vodka, Juniper Green Gin, Papagayo Organic Rum, Highland Harvest Scotch, Roundhouse Spirits and Wicked Hard. In addition, Dae Gee Korean BBQ, Vital Cultured Foods, Vibrant Veggies, MM Local Foods, Esoteric Foods, LuLu's BBQ, El Toro The Tot food truck, and Beer Bites Premium Jelly plan to showcase fermented foods.

And that's not all: Along with foodstuffs and libations (and kombucha for those of you who, for some reason, want to snub alcohol), there will also be educational seminars and demonstrations on brewing kombucha tea, kefir fermentation, home cheesemaking, pickling kimchi and sauerkraut, crafting fruit wines and homebrewing.
