Food & Wine magazine singles out Rocky Mountain Chili Bowl's "chili" as one of the best in the country

Love it, or loathe it, green chile is a Denver table staple, and while we all have our undisputed favorite places to get our green fix (El Taco de Mexico is mine), the restaurant squad from Food & Wine magazine just unleashed their own picks for the "Best Chili in the US" -- and one Denver joint secured a spot on the roster.

"Chili has so many regional iterations, and each version comes with its own cult following. Is it best with beef or chicken? Green chiles or red? Vegetarian or bean-free Texas-style?" wondered Jessica Colley, who penned the article and gave the lone Colorado shout-out to Rocky Mountain Chili Bowl, a brick-and-mortar in Stapleton that got its start as a mobile food cart.

Here's what Colley had to say about the joint's verde:

What started as a food truck flaunting the slogan "Go green or go home" has grown into a dedicated green chili restaurant. RMCB's pork and vegetarian green chilies are available in mellow, medium or hot--spiked with hot Hatch green chiles, jalapeños and secret seasonings. Thanks to implementing a long list of eco-initiatives, the restaurant is also now certified green.

This was a fun argument to read - from the POV of a bunch of gringoes who leave Yelp reviews about the "inauthenticity" of Mexican restaurants run by immigrants on Federal and go home to their 500 sq ft condos in Lodo.

"Chili" is an americaniztion of "chile" which is a long type of pepper in Spanish. The country of Chile is in the shape of this pepper, thus the name.

Taco de Mexico is arguably the best in Denver. I can think of dozens of New Mexican restaurants which serve better C-H-I-L-E than anything in Denver. Go try El Paragua in Espanola for starters.
