5280 Burger Bar & Creamery opening today in Denver Pavilions

Denver's in the middle of another burger bonanza.

Bad Daddy's just opened on Monday in Cherry Creek, and today 5280 Burger Bar & Creamery will open in Denver Pavilions. It's the initial Colorado franchise of Restaurant 512 Fresh, a company based in Austin, Texas -- and certainly the first with the 5280 name.

5280 boasts a chef-driven menu featuring "never ever" (which means never touched by antibiotics) Colorado beef, as well as seasonal local ingredients; each burger will have its own homemade sauces and toppings. And in a nod to its mall location, it also has homemade ice cream -- sixteen flavors, each of which you can enjoy in an alcohol shake, and all managed by a fulltime ice cream chef.

Says owner Don Redlinger: "We were drawn to a downtown Denver location because we love the traffic that the Pavilions gets. We have an exceptional menu, and we wanted to choose the highest profile location we could find."

Can we PLEASE get a burger place that serves grass-fed beef instead of the virtually meaningless "natural" and "antibiotic-free," which is basically just industrial feedlot beef?  In the ATL, where I'm from, there are 3 mini-chains that serve grass-fed burgers: Yeah! Burger, Farm Burger, and Flip Burger.

Surely Denver, surrounded by cattle ranches, can support at least ONE burger bar that serves decent beef...


I agree, it'd be great to have one. I think the one in CCN was called ecoburger? Not a very well marketed concept and possibly was a little ahead of its time. Seems like the market is there now.


@rebeldor  We had one in Cherry Creek and for whatever reason, it did not make it.
