The Cochon 555 tour has been taking to the road for six years now. Each year the tour serves up more than eleven tons of heritage pork raised by family farms across the country. This year's culinary, nose-to-tail competition stop in Denver will feature Jennifer Jasinski of Rioja, Paul C. Reilly of Beast & Bottle, Justin Brunson of Old Major, Bill Greenwood of Beano's Cabin and Steve Redzikowski of OAK at Fourteenth. Each of the five contestants will prepare no more than six dishes from five whole pigs, which will be judged by the crowd and a panel of judges that includes Cafe Society's Lori Midson. The event will also feature wines from five wineries to accompany the thirty chef prepared dishes. There will also be a live butchering event and preparation of an additional whole pig in an Asian-speakeasy style. For more information visit the Denver Cochon 555 website. The event will take place at the Ritz-Carlton Denver; doors open at 4 p.m. Tickets are sold out but who knows, you might get lucky.
