Ginza Sushi & Grill "coming soon" to One Observatory Park

"With a fresh market, café, wine shop, fine dining and more all at street level, you and your guests may never have to leave home," promises the website of One Observatory Park, a new retail, restaurant and upscale apartment development at University and Evans, across the street from the University of Denver.

Nonetheless, the modern, multistory building, at least at street level, still has thousands upon thousands of empty square footage, save for an outpost of Qdoba, which is neither a "fresh market, café, wine shop" or "fine-dining" restaurant. But it appears as though one of those behemoth vacant storefronts will finally have a full-service restaurant, namely Ginza Sushi & Grill, which, according to the exterior banner," is "coming soon."

The restaurant, which is presumably named after the Ginza, Tokyo's most famous shopping, entertainment and dining district, is currently under construction, and it looks like it still has a a few month to go before the neighborhood can sample its sushi and grill (hibachi?) cooking. Interestingly, there's already a Ginza Sushi & Grill in Champlin, Minnesota, but whether or not it's related to the Denver location is unclear.

Meanwhile, across the street, a 7-Eleven (yawn) is taking over a portion of Jordan's Bistro and Pub, which closed in November of last year; the second half of the space is still for lease and begs for a great neighborhood restaurant -- but not sushi.
