Blue Spruce Brewing opens in Centennial to a packed house

Blue Spruce Brewing, serving Mexican food, pub fare and beer made on the premises, opened for business on Saturday at 4151 East County Line Road, in Centennial.

Owned by former biology teacher Rick Kane, Blue Spruce opened with eight of its own brews (although some have already kicked), including honey kolsch, pale ale, red ale, brown ale, IPA, Golden Strong, doppelbock and apricot blonde. It was also pouring from twelve guest taps and serving a limited initial menu.

Kane couldn't be reached for comment, but the brewpub's Facebook page reported that Blue Spruce "was packed, standing room only for about 10 hours straight yesterday. The party continued until just after 11pm, when we had to ask everyone to make their way out. Thank you so much for coming out to our first day."

Last August, Kane told Westword that he planned to feature "Mazatlan-style" Mexican fare using fresh vegetables and very few fried items. He also said that he'd been picky about the location, looking at traffic counts and age demographics." He picked Centennial because there aren't many other breweries nearby.

Blue Spruce can seat about 220 people and will feature a patio. Hours are Monday to Wednesday, 11 a.m. to 10 p.m.; Thursday to Saturday, 11 a.m. to 11 p.m.; and Sunday from 11 a.m. to 9 p.m.

Maybe the place is still evolving, but so far that menu of "'Mazatlan-style' Mexican fare using fresh vegetables and very few fried items" consists entirely of hamburgers and hot dogs.
